Rolling a ball of blue masa into a ball
  • Our ancestral kernel to masa technique, and high-quality heirloom corn grown right here in Michigan!

  • Unfortunately, highly processed corn flour has flooded the market in the last few decades and to increase profit markets, cheap GMO corns are used alongside preservatives to extend shelf life.

  • Masa has endless possibilities, like tortillas, tamales, dumplings, breads, and drinks such as atoles.

There are plenty of masa cookbooks to help you get started.

    1. We start from fresh corn kernels from Michigan farmers.

    2. The kernels are nixtamalized, where they are soaked in limewater.

    3. The kernels are rinsed.

    4. We grind the kernels using a wet mill.

    5. Then we ball and press the masa into tortillas.

    6. They are baked and packed up for you!

Learn more here about our process and the benefits of nixtamalization.
